I came across a recipe at Make And Takes for Pop UP Pancakes a few months ago and it is a BIG HIT with my kids. It is basically German Pancakes cooked in muffin tins. It has become somewhat of a ritual now to make them for our Saturday breakfast, but we have even had them for dessert.

We usually top them with fresh sliced strawberries and syrup, yummy!
